I mean sure… It is possible… But most of the time recipes are either ultra-healthy (and very grain-y) or they are so light they suck up syrup in an unpleasant way.
But even vegans want to have fluffy pancakes…
What is a vegan to do?
My answer? Make these. Seriously. Right now. You have the ingredients in your kitchen.

YIELD: 1 large serving or two small servings
2 tsp. lemon juice
3 tsp. baking powder
2 tsp. sugar
1 tsp. vanilla
1 tsp. ground flax
1/4 tsp. salt
3/4 cup flour
1/2 cup unsweetened almond milk
1/4 cup water
Mix the ingredients together one by one in a batter bowl. The lemon juice and baking powder will foam.. Don’t worry.
Then just fire up a skillet on medium-high or a nonstick griddle, and fry until golden brown on each side.
